Zucchini Chocolate Chip Muffins

Zucchinis are a vegetable that can quickly get out of control.  Just how big can a zucchini grow?  72 muffins is my answer.  Yes, I made 72 muffins once out of 1 zucchini.  While clearly the smaller, daintier ones are preferred for cooking, I say, "Bring it on!" when it comes to their size for baking.  Here is a recipe that I have made healthier, (and dare I say tastier), than some other versions.  The batter can equally be used to make a bread/loaf instead of muffins.



Ingredients:

1 1/2 cups of whole wheat flour
1 1/2 cups of all purpose white flour
1 cup of sugar
2 tsp of baking soda
1 1/2 tsp of cinnamon
1/2 tsp of kosher salt

3 cups of shredded zucchini
2 eggs lightly beaten
1/2 cup of vegetable oil
1/2 cup of milk
2 tbsp of lemon juice
2 tsp of vanilla extract

1 cup of chocolate chips
chopped walnuts on top optional

Mix all dry ingredients.  Then mix all wet ingredients in a separate bowl.  Combine the wet into the dry mixture, then add chocolate chips.  Fill muffin cups with 1/4 cup of batter and top with chopped walnuts if desired.  Recipe will make 2 dozen muffins.  Bake at 350 degrees F for 20-25 minutes.  Enjoy like Keira does, with a big pad a butter on a warm one!
